Heat some sunflower oil or groundnut oil. Take a flour tortilla and cut it in half and then into segments. When the oil is hot, dip the corner of a tortilla piece to check the oil temperature. If the oil is hot enough, the tortilla will sizzle. If you happen to have an oil thermometer, you’re aiming for 190˚C. Add a few tortilla chips at a time and fry for about a minute, turning after half a minute. When golden, remove using a slotted spoon and place on some kitchen towel.
